Spinach and Turkey Stuffed Bell Peppers
Ingredients:
- 4 large bell peppers
- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups fresh spinach, chopped
- 1/2 cup grated cheddar cheese
- Salt and pepper, to taste
Instructions:
- Preheat the oven to 375°F.
- Cut off the top of the bell peppers and remove the seeds and membranes.
- In a large skillet, heat the olive oil over medium heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the ground turkey and cook until browned, about 10 minutes.
- Add the spinach and cook until wilted, about 2 minutes.
- Season with salt and pepper.
- Fill each bell pepper with the turkey mixture.
- Place the stuffed bell peppers in a baking dish and sprinkle with cheddar cheese.
- Bake for 25-30 minutes, or until the cheese is melted and the bell peppers are tender.
- Serve hot and enjoy!
