Baked Avocado Egg Boats
Ingredients:
- 4 ripe avocados
- 4 eggs
- Salt and pepper, to taste
- 1 cup cherry tomatoes, halved
- 1/2 red onion, diced
- 1/4 cup cilantro, chopped
Instructions:
- Preheat the oven to 425°F.
- Cut the avocados in half and remove the pit.
- Place the avocado halves in a baking dish.
- Crack an egg into each avocado half.
- Season with salt and pepper.
- Top with cherry tomatoes, red onion, and cilantro.
- Bake for 15-20 minutes, or until the egg whites are set.
- Serve hot and enjoy!
