Cauliflower Rice Chicken Stir-Fry
Ingredients:
- 2 boneless, skinless chicken breasts, sliced into thin strips
- 1 head cauliflower, grated
- 2 tablespoons coconut oil
- 1 red bell pepper, sliced
- 1 yellow onion, sliced
- 1/2 cup snow peas
- 2 cloves garlic, minced
- 1/4 cup coconut aminos (or soy sauce)
- 1 teaspoon ginger paste (or freshly grated ginger)
- Salt and pepper, to taste
- 2 green onions, sliced (optional)
Instructions:
- In a large skillet, heat 1 tablespoon of coconut oil over medium heat.
- Add the chicken strips and cook until browned, about 5 minutes.
- Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining 1 tablespoon of coconut oil.
- Add the red bell pepper, yellow onion, snow peas, and garlic. Cook until softened, about 5 minutes.
- Add the cauliflower rice to the skillet and stir to combine.
- Add the cooked chicken back to the skillet.
- Stir in the coconut aminos and ginger paste.
- Season with salt and pepper.
- Cook until the cauliflower rice is tender, about 5 minutes.
- Serve hot and garnish with green onions (if desired). Enjoy!
