 Baked Avocado Egg Boats










Ingredients:

  • 4 ripe avocados
  • 4 eggs
  • Salt and pepper, to taste
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1/4 cup cilantro, chopped

Instructions:

  1. Preheat the oven to 425°F.
  2. Cut the avocados in half and remove the pit.
  3. Place the avocado halves in a baking dish.
  4. Crack an egg into each avocado half.
  5. Season with salt and pepper.
  6. Top with cherry tomatoes, red onion, and cilantro.
  7. Bake for 15-20 minutes, or until the egg whites are set.
  8. Serve hot and enjoy!
