Sweet Potato and Black Bean Tacos Recipe











 Ingredients:

  • 2 medium sweet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • 1 can black beans, drained and rinsed
  • 8 small flour tortillas
  • Toppings (optional): shredded lettuce, diced avocado, diced tomato, shredded cheese, salsa, sour cream

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the diced sweet potatoes, olive oil, chili powder, cumin, salt, and pepper.
  3. Spread the sweet potato mixture evenly on the prepared baking sheet. Roast in the oven for 20-25 minutes, or until tender and slightly browned.
  4. Meanwhile, in a small saucepan, heat the black beans over medium heat for about 5 minutes, or until heated through.
  5. Warm the tortillas according to package instructions.
  6. To assemble the tacos, divide the roasted sweet potatoes and heated black beans among the tortillas. Top with desired toppings. Serve immediately.
