Chicken Parmesan Zucchini Boats

















Ingredients:
- 2 large zucchini, cut in half lengthwise - 2 boneless skinless chicken breasts, cooked and shredded - 1/2 cup sugar-free marinara sauce - 1/2 cup shredded Parmesan cheese - 1/4 cup mozzarella cheese - 1/4 teaspoon garlic powder - 1/4 teaspoon Italian seasoning - Salt and pepper to taste - Fresh parsley, for garnish Instructions: 1. Preheat oven to 350 degrees F. Spray a baking sheet with non-stick cooking spray. 2. Place the zucchini halves on the baking sheet and season with salt and pepper. 3. In a medium bowl, mix together the shredded chicken, marinara sauce, Parmesan cheese, mozzarella cheese, garlic powder, and Italian seasoning. 4. Divide the chicken mixture between the zucchini halves and spread it out evenly. 5. Bake in the preheated oven for 20-25 minutes, or until the zucchini is tender and the cheese is melted and bubbly. 6. Garnish with fresh parsley and serve. Enjoy!
